I have a bachelors degree in business from UOP and I am currently enrolled in their MBA program. I am doing my classes online as my work schedule makes it difficult to attend classes at the campus. I had taken classes at a state school and my local community college before attending UOP, and the quality of education at UOP is comparable, if not better.

Earning my degree from UOP has allowed me to almost double my salary compared to what I was making without a degree. I have had nothing but positive experience with my UOP degree. I have never encountered any prejudice towards a UOP degree. I know several other UOP graduates and they have had similar experiences. However, I have heard some employers are biased against UOP. If you ask me this bias is due to ignorance and I would not want to work for a narrow mined employer. I do know that Boeing has a partnership with UOP and they encourage their employees to attend UOP.

If you are considering going back to school UOP is an excellent choice, but I would recommend looking into several schools and decide which is best for you.
References :
It really depends on your field of study. I have never had a problem getting a job with any of my nursing degrees: Associates from a private college, Bachelor's from a state university, and Master's from an online university (UOP).

Call the professional organizations/governing body for your profession. Talk to recruiters/employers before you register. Do they require you to attend a certain type of school? Does you school need to be accredited? By any specific bodies? Use this information when you are looking at any school, not just UOP.

UOP is accredited by several bodies. Use this list when talking to recruiters/employers: http://www.phoenix.edu/about_us/accreditation.aspx

I enjoyed UOP more than the traditional school I got my AA and BS from. My masters program consisted of discussions, papers, and projects. For me, the benefit of being able to do school work on my own schedule outweighed the cons of the high cost.

I was working as a nursing educator at a university hospital while attending UOP. My supervisors were supportive of me going to school and liked that I wasn't taking off work to go to traditional classes. I was able to use many of my work projects for school projects also, killing two birds with one stone so to speak.

Within two months of graduating I had two new job offers (one from a private college and one from the university hospital). I was even on a phone interview in less than an hour of commencement, I was still in my regalia even.

I took the job teaching nursing at the private college. That same semester they hired another faculty member who was completing her Masters at UOP. I am now back at the university hospital, and another nurse is completing her Masters at UOP.
References :
UOP Class of '03

U of P is regionally accredited, which means that its credits are transferrable to other schools. However, it's a very low level university which isn't considered academically strong at all, and worse, it's famous for being online, for profit, and very lax in its admission standards. That means that a lot of employers in the US refuse to hire its graduates, and you'll face that when you come out.

However, there are employers who won't be concerned at all. They'll be okay with your degree. And there are fields which are just fine with a U of P degree - teaching and nursing.

If you want a better respected online degree, you can look at U Maryland, UMass Amherst, Penn State, Northeastern, and Southern New Hampshire University. SNHU is less known and not as strong as the others I listed, but it's cheaper and easier to get into.
References :
Just one advice don't ever try to use the UOP degree in Europe. They don't recognize it.
